THE BRUNCHERY – a restaurant with varying opening hours

The design of The Brunchery restaurant in Warsaw, located on the ground floor of the Towarowa 22 development, was conceived as a space that adapts to the rhythm of the day. In the morning and at lunchtime, it caters to the needs of employees from nearby offices, offering breakfast, quick service, and takeout. In the evening, the space transitions into a more intimate dining atmosphere with table service, wine, cocktails, and a different lighting scheme. We designed the interior so that both operating models could utilize a single, cohesive space. A central piece of furniture connects the display area, the kitchen service counter, the bar, the communal table, and the DJ booth, and the entire layout radiates out from it in an orbital pattern, organizing the flow of traffic and the various zones of the venue.

The Brunchery demonstrates how the design of a dining establishment can support its use throughout the day. Instead of designing the space for a single service scenario, we created a system that allows for a transition from a quick breakfast-and-lunch model to a full dining experience in the evening. The service model, product display, lighting, and atmosphere all change, but there’s no need to remodel the interior. As a result, the same space can meet different customer needs and cater to several market segments depending on the time of day.
